Re: sort of rough translation.
I suppose for a literal translation "proper sitting" would be ok, though I doubt anyone who doesn't know Japanese would understand exactly what that meant. "Kneeling" might be closer, even though it's a bit different... If you really like to be percise, you could leave it as seiza with a translator's note or something. Otherwise you could be a bit more vague and say something like "Westerners don't usually sit like this/in this pose". It's translator's choice, I guess ^^
